For the Hen:
- 2 kilos hen breast lower into ½ inch cubes
- 2 tbsp olive oil
- 2 tsp cumin
- 1 tsp smoked paprika
- 2 tsp oregano
- 2 tsp sea salt
- 2 tbsp lemon juice
- ½ cup plain yogurt
- Romaine or butter lettuce for serving
For the Salsa:
- 1 plum tomato diced
- ½ purple onion diced
- 1 tbsp lemon juice
- 1 tsp rice vinegar
- 2 tbsp chopped cilantro
- ¼ tsp sea salt
For the Yogurt Sauce:
- ½ cup plain yogurt
- ½ cup shredded cucumber
- 1 tbsp lemon juice
- ½ tsp sea salt
- ¼ tsp black pepper
Directions

Preheat oven to 450 levels F. Line a sheet pan with parchment paper. Put aside.

In a big bowl, whisk collectively the olive oil,cumin,smoked paprika, oregano, salt, lemon juice and yogurt.

Place the diced hen within the bowl and toss to mix.

Unfold in a single layer on the ready sheet pan.

Bake for quarter-hour, or till the hen is totally cooked by.

WHile the hen is cooking, make the salsa and yogurt sauce.

Mix the salsa elements right into a small bowl and gently combine to mix. Put aside.

Mix the yogurt sauce elements in a small bowl and blend to mix. Put aside.

To serve prime lettuce leaves with hen, salsa and yogurt sauce.
