  • 2 tbsp purple wine vinegar
  • 2 tbsp lemon juice
  • 2 tbsp additional virgin olive oil
  • 4 garlic cloves minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp cumin
  • ¼ tsp black pepper
  • 2 lbs shrimp peeled + deveined
  • 1 giant zucchini reduce into ¼ inch half-moons
  • ¼ cup crumbled feta non-compulsory
  • 1 tablespoon chopped parsley non-compulsory

Directions 

  • Preheat oven to 375 levels. Line a sheet pan (or two) with parchment paper.

  • Mix the purple wine vinegar, lemon juice, olive oil, garlic, oregano, salt, paprika, cumin and pepper right into a medium sized bowl. Add the shrimp and toss to mix.
